1995 Cabernet Sauvignon
This was our second release varietal Cabernet Sauvignon, and is again sourced from our very special Cabernet vineyard. Planted on the river flats near the cellar door where tobacco once grew during World War 1.
These deep, black alluvial soils were particularly important during the dry 1995 vintage. A drought during the winter of 1994 was followed by frosts in October and November, placing the vines under stress. It was the moisture held deep below these soils which enabled the vines to develop a small yet concentrated crop. The smaller bunches were then subject to a long, slow ripening period.
This wine has received wood maturation in French and American hogsheads for 22 months prior to bottling. This elegant Cabernet is the result of a cool year, the oak is soft, the tannins are fine and the fruit is distinct with easily identifiable blackcurrant and cassis overtones.
